Happy New Year

I hope everyone had a wonderful Christmas! I can't believe how fast time flies by. I was looking at our baby boy enjoy his first Christmas and couldn't believe that only this time last year we were awaiting his arrival. He will be 1 year on Jan. 2nd! It is amazing.

PINA COLADA PUNCH
One 10-ounce pina colada frozen concentrated fruit mixer, thawed
One 5-ounce pineapple juice frozen concentrated, thawed
One 1-liter ginger ale
Mix together well in punch bowl or pitcher.
Add 5 cups crushed ice.
Add pineapple sherbet, if desired.
Don't forget your blackeyed peas, turnip greens and corn bread for New Years Day!

Modern Day Miracles

I am amazed at all the miracles that still take place in todays time. I have heard time and time again that Jesus' miracles were from a time long ago. But that is not true. Miracles surround us, a child's smile and laughter, the beautiful sunshine, the rainfall on dry land, recieving an unexpected blessing that only you and the Lord knew you needed. My mother used to say as she would look upon a hill of changing leaves on the trees in the fall that, "God's been painting". I think of that many times throughout my days. God is always painting, not only painting the beautiful scenery that he has given us to take care of but also painting in our lives. He is always working in our lives and hearts to become the child of God that he wants us to be. In times of trouble and in times of joy, if I am open to what the Lord wants from me then I can clearly see him working in my life. These are just a very few of the unlimited miracles and blessings we recieve everyday of our lives, but we are usually too busy or jaded to notice. In times of uncertainty we can be certain that one thing on this earthly place is constant, the Lord's love for us. He sends us miracles and blessings each and everyday for us to enjoy and give thanks for. We should glorify him in all that we do and recieve. How has the Lord blessed you today? Take a look around right now and next time you are driving to the store or looking out your window or talking to your children or spouse and be thankful to the Lord for those modern day miracles.

Grandmother Smiths Haystacks

This recipe is on that has been passed down throughout generations in my family. It brings back warm memories of this time of year. My grandmother would make these every year for Christmas. They are fun and easy to make. Great to make with kids!


Grandmother Smiths Haystacks

1 2/3 cups of Butterscotch Morsels
3/4 cup of Creamy Peanut Butter
2 Cans or 1 Bag of Chow Mein Noodles
3 1/2 cups miniture marshmallows


1) Line Baking Sheets with wax paper
2) Microwave morsels in large bowl on medium high heat 70% then stir
3) Microwave an additional 10-20 seconds intervals stirring until smooth
4) Stir in Peanut Butter until well blended
5) Add noodles and Marshmallows and toss until well coated
6) Drop onto tray in spoonfuls and refrigerate to set until ready to serve

* You can use a double boiler to melt the butterscotch instead of a microwave if desired.,

Rainy Day Recipe

Good morning,

it is a rainy day here in Birmingham, Alabama today and it brings to mind a great wintery recipe. You may already have it but I thought I might share it with you just in case you don't:

Santa Fe Soup

1 Can Kidney Beans
1 Can Pinto Beans
1 Can Black Beans
1 Can Shoepeg Corn
1 Can Rotel
1 Envelope Ranch Dressing Mix
2 Tablespoons Taco Seasoning
1 lb ground beef (optional)


If you are using ground beef in the recipe brown it first and then throw it into the crockpot with the remaining ingredients.

Mix together all ingredients into a crockpot and simmer on the low setting for at least 1 hour. And that is all there is to it. If you like you can top it with a little bit of shredded cheese and sour cream for a little extra yummy.

I made it through.

Today was a different kind of day. It was a strange day. One that made my world feel a little of kilter just as it did 2 years ago this day. Today is December 3rd 2008. My mother passed away December 3rd 2006. She died of Ovarian Cancer. She had a short struggle but a hard one. I think on this day how good the Lord is. How good he is to bring me a beautiful son who will be 1 year next month. How good he is to have blessed me with such a loving husband. What great wonderful friends and family He has brought into my life. Even though we go through the tough times in life, there is always good to come right around the corner, we just have to be open to see it. My mother was the best mother a child could ask for. I miss her just as much today that I did 2 years ago when she left us to be with Jesus in heaven. I know that he prepared for her a glorious mansion and her mansion was finished and ready for her.

We are finally here!

Hey there everyone! I hope you all had a wonderful Thanksgiving and are enjoying this Christmas Season that is upon us.
